When Tom Forrest and his family bought the Wills Valley line of products from Tim and Ann Bock to keep the brand alive, they became another thread connecting back to a very ancient way of preserving food. The Bock's decision to sell worried a lot of our regular customers. What would happen to their favorite lacto-fermented products? Fortunately for all of us, the Forrests have retained the traditional recipes and methods and still offer almost all the products the Bock's did, though they are now made at their farm in southern Lancaster County.
Don't miss the opportunity to learn more about the health benefits of unpasturized lacto-fermented vegetables, by joining us Saturday! The numerous benefits have been recorded since the time of the ancient Greeks. As many of you already know, the probiotics created by "the proliferation of lactobacilli in fermented vegetables (fruits and dairy) enhances their digestibility and increases (their) vitamin levels," to quote Sally Fallon, president of the Weston A. Price Foundation. Weston A. Price has long championed these foods. The Mayo Clinic's website also has some easy to digest information on probiotics.

6th Annual Buy Fresh Buy Local Week July 12th - 20th
Buy Fresh Buy Local Week is an annual celebration of the availability, unparalleled freshness, and economic and environmental benefits of food grown within 150 miles from farm to plate. From July 12th - 20th, twenty-four fun, food-filled festivities around Southeastern PA will highlight locally grown food, sustainable family farms, and the countless ways community members can strengthen their regional food system.
All Buy Fresh Buy Local Week events are open to the public and family friendly- and most are FREE! For a complete listing of events and to buy tickets to the Kick-Off Party on Sunday July 13th at the Philadelphia Brewing Company visit the Local Food Philly website.
Did you miss the first Farm Tour? Join us on the second Farm Tour of the Season, featuring Lacto-Fermented Vegetables! When: Saturday, July 12; 10AM - 1PM
Where: Wills Valley Farm, Holtwood, PA
Enjoy a day out as farmer Tom Forrest shows us around his certified organic farm, which specializes in unpasteurized lacto-fermented vegetables and jams. We will be joined by Sandor Ellix Katz, the esteemed author of "Wild Fermentation: The Flavor, Nutrition, and Craft of Live-Culture Foods" and "The Revolution Will Not Be Microwaved: Inside America's Underground Food Movements". After a tour of this unique farm, we will picnic at the scenic Pinnacle Point, which overlooks the Susquehanna River and miles of beautiful farmland. Atop the riverside cliff, we will enjoy sausages and tofu dogs topped with Wills Valley's own sauerkraut and fermented red cabbage.
Ticket price includes a deliciously fresh and local picnic, and a donation to Fair Food.
Prices: $25 Adult, $12 Child (6-13). Kids under 6 are free. FMNP (WIC or Seniors) participants receive a 50% discount.

Building Successful Community-Based Food Initiatives:
A Community Food Initiatives Workshop
Join Hugh Joseph, PhD, Assistant Proessor at the Agriculture, Food & Environment Program at Tufts University's Friedman School of Nutrition in Boston, in a full day training workshop aimed to help participants plan a new or emerging community-based food or farm project, or improve an existing one. In addition to the workshop, individualized workshops will be available the day before for 6-8 organizations that request it in advance.

Fresh Corn Spoon Bread
Servings: Makes 6 servings.
Ingredients
2 cups whole milk
1/3 cup yellow cornmeal
1 1/2 cups fresh corn kernels (from 2 to 3 ears)
1 tablespoon unsalted butter
1 teaspoon salt
4 large eggs, separated
Preparation
Preheat oven to 425°F.
Bring milk, cornmeal, corn kernels, butter, and salt to a boil in a 3-quart heavy saucepan over moderately high heat, stirring frequently, and simmer, stirring constantly, until thickened, 3 to 4 minutes. Remove from heat and cool 5 minutes, stirring occasionally, then whisk in yolks.
Beat whites and a pinch of salt with an electric mixer at medium speed just until soft peaks form. Whisk one fourth of whites into cornmeal mixture in pan to lighten, then fold in remaining whites gently but thoroughly. Spread mixture evenly in a buttered 9 1/2-inch deep-dish glass pie plate or 1 1/2-quart shallow casserole and bake in middle of oven until puffed and golden, 15 to 20 minutes.
Serve immediately (like a soufflé, spoon bread collapses quickly).
