GRASS-FED BLACK ANGUS GROUND BEEF can again be found in the Farmstand freezer, this time from Rineer Family Farms in Pequea, PA. Daryl’s winter market customers raved about this flavorful beef, and we are pleased to have the opportunity to offer it to you.

We can’t wait to try three new takes on Maine Sea Salt Co.’s delicious salt, all arriving later in the week. Expect gift-ready jars of HICKORY SMOKED SEA SALT (perfect for a rub or marinade), HERBED SEA SALT (bright with french herbs for fish or poultry), and DULSE SEA SALT, which contains wild-harvested seaweed from the coast of Maine.

Fans of Shellbark Hollow Farm’s Dry Sharp Chevre goat cheese, goat kefir, and goat yogurt have something new to look forward to. Pete’s GOAT RICOTTA is clean tasting, creamy and soft-textured, suited to recipes that can highlight its delicate flavor.  See this week’s recipe: Ricotta Gnocchi.

Shady Acres Farm in Elizabethtown, PA is back up and running after a winter of waiting for the grass to return. On Tuesday, we received cuts of their first spring batch of pastured chickens, including: BONELESS CHICKEN BREAST, BONE-IN CHICKEN BREAST, and CHICKEN LEGS AND THIGHS. Since even pastured chickens’ diet must be supplemented with grain, please understand that the prices have increased since last fall due to increased feed costs.

Started in 1998 by Stephen C. Cook, Maine Sea Salt Company is the first salt works in Maine in more than 200 years. Stephen grew up on Bailey Island, ME working in his family’s lobster restaurant, whose secret recipe involved boiling lobster in seawater straight from the bay. Throughout his life, he cherished the distinct flavor that the ocean water imparted to the meat, and as an adult, he set out to make it available to those not lucky enough to live on the Gulf. After much experimentation, he perfected his surprisingly energy-efficient technique of harvesting sea salt from ocean water through solar evaporation. The process begins by pumping ocean water straight from the Gulf of Maine into plastic-covered hoop houses with watertight floors. The heat trapped by the plastic works with the wind blowing through the tunnels to speed up the process of natural evaporation. Before long, all of the water has vanished, leaving a layer of pure white salt crystals. These are scraped up, seasoned or wood smoked, or just scooped right into packages. You can’t get much less processed than that!Unlike most salts on the market, Maine Sea Salt contains no drying agents, anti-caking chemicals, or added iodine. If you’ve used this salt in the past, you might have noticed that it feels slightly moist and does not pour well from a saltshaker. This characteristic is a testament to the purity of the product; unprocessed sea salt absorbs moisture from the atmosphere and Stephen adds none of the chemicals used by larger companies to avoid clumping. Also, as the salt is not washed or bleached, it retains the numerous trace minerals present in ocean water. The best way to store this salt for daily use is in a small container such as a saltcellar or jar from which salt can be pinched out as needed. But be careful not to add too much, this wonderful salt packs a serious punch!

Ricotta Gnocchi w/ Brown Butter Sage Sauce

Prep Time: 30 minutes, Cook Time: 15 minutes

Ingredients:
3 Tablespoons butter
1 teaspoon chopped fresh sage
3/4 teaspoon salt
1/4 teaspoon ground black pepper
1 container (15 ounces) ricotta cheese
6 Tablespoons freshly grated Parmesan cheese
3/4 cup chopped fresh parsley
3/4 cup all-purpose flour or as needed

Preparation
In 2-quart saucepan, melt butter over medium heat. Continue to cook, stirring, until butter turns golden brown. (If butter gets too dark, it will be bitter.) Remove from heat and add sage, 1/4 teaspoon salt, and pepper; set aside.

In medium bowl, combine ricotta, Parmesan, parsley, and remaining 1/2 teaspoon salt. Sprinkle flour over ricotta mixture and, with your hands, work mixture into soft, smooth dough. If dough is sticky, add some flour. Work dough just until flour is incorporated into cheese mixture; do not overwork.

Break off piece of dough; on lightly floured surface, roll into 3/4-inch-thick rope. (If rope doesn't hold together, return to bowl with remaining dough and work in more flour.) Cut dough rope into 3/4-inch lengths. Place one piece of dough on inside curve of fork tines, gently pressing on dough with thumb as you roll dough along tines. Allow dough to drop off fork, slightly curling in on itself, forming an oval. One side of gnocchi will have ridges and opposite side will have an indentation. Repeat rolling, cutting, and shaping with remaining dough. (Gnocchi can be made up to 4 hours ahead to this point. Arrange in floured jelly-roll pan; cover and refrigerate.)

In 5-quart saucepot, heat 4 quarts water to boiling over high heat. Add half of gnocchi an cook until gnocchi float to the surface, 2 to 3 minutes. With slotted spoon, transfer gnocchi to warm shallow serving bowl. Repeat with remaining gnocchi. To serve, toss gnocchi with sage butter.

Yield: 8 first-course servings
