Hallelujah…we have STRAWBERRIES! Though a few trickled in last week, this is the first true flush of the treats we’ve been waiting for all winter. We opened on Tuesday morning with fresh berries from three different farms: Lancaster Farm Fresh Coop in Quarryville, PA, Rineer Family Farm in Pequea, PA and Fifer Orchards in Wyoming, DE.

Just in time for strawberry season, stacks of gleaming RED RHUBARB from Landisdale Farm and Rineer Family Farm (both located in Lancaster Co.) wait at the Farmstand to be made into pies. For another delicious way to prepare this unique vegetable, see this week’s recipe: Hungarian Shortbread.

Fair Food Farm Tour Series

Have you ever wondered what broccoli looks like in the ground, or how often hens lay their eggs? Many of us try to educate ourselves about the food we eat and how it is grown and arrives at our plates, but the best food education really comes from the farm and the farmers themselves. However, if you are not ready to leave behind your job and friends in the city to start farming, perhaps a farm tour is your next best bet.

In a world where consumers are increasingly disconnected from where their food comes from, Fair Food strives to re-establish links between residents and local farms in the region. Each year for our Farm Tour series, we take groups of people to privately-owned family farms located within a 90-minute drive of Philadelphia in Montgomery, Lancaster, Lehigh, Chester and Bucks counties and also in Southern New Jersey and Delaware. The Farm Tour series corresponds with the height of the growing season, which runs from May through October (at right are participants in last year's 'U-pick' tour to Weaver's Orchard in Morgantown).

Throughout the season, we see a wide variety of vegetables, fruits, grains and livestock grown and raised using humane sustainable farming practices. For some city residents, the farm tour may be the first time they get to see how a farm runs and where their food comes from. For other city residents, visiting these farms brings back memories of a childhood growing their own vegetables or canning and preserving the harvest. Many visitors are amazed to learn how much hard work and planning goes into running a farm and they all enjoy a day in the beautiful countryside!

The farm tours usually consist of visits to one or two farms. This includes a delicious picnic lunch on the property, incorporating at least one ingredient that is provided by the farm. Come out with us and get to know your farmers as well as other Philadelphia residents who are interested in local and sustainable agriculture. Our first farm tour will be a U-Pick visit to Weaver’s Orchard in June. We're working on this year's schedule, but see the schedule from last year to get an idea of where we'll be going.

Hungarian Shortbread

The Jam:
1 lb rhubarb
½ cup sugar
½ cup water
½ vanilla bean

The Shortbread:
4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 lb unsalted butter, room temperature
4 large eggs
2 cups sugar
confectioners sugar, for dusting

Jam:
Place rhubarb, sugar & water in a saucepan. Split the Vanilla bean and scrape the soft seeds into the pan. Bring to a simmer over low heat. Cook stirring often until the rhubarb is soft. Cool the jam.

Shortbread:
Whisk the flour, baking powder & salt together, set aside. In another bowl beat the butter until it is pale and fluffy. Add the egg yolks & sugar and beat until the sugar is dissolved and you have a light mixture. With you mixer on low speed slowly add the flour mixture, mix ONLY until the ingredients are incorporated. Turn the dough out on you cutting board, cut in half and form each half into a ball, wrap each ball in plastic wrap. Freeze the dough for at least 30 minutes.

Assembling & Baking:
Preheat oven to 350F with rack in center of the oven. Remove one ball of dough from the freezer and grate the dough into a 9x12" baking pan (use large hole side of your 4 sided grater). Pat the dough - don't press it, so it gets evenly spread in the pan and into the corners. Spread with the Rhubard Jam. Grate the remaining ball of dough on top, pat gently so it is evenly spread. Bake for approx 40 minutes or until it is golden. As soon as you take the pan from the oven dust generously with confectioner's sugar and cool to room temperature on a rack. Cut into bars. It is nice served with a dab of whipped cream.
